Kathiyawari Mix Veg

Ingredients:

For Paste:

Garlic                                                   2 tbsp

Red Chilli Powder                               2 tbsp

Coriander-Cumin Powder                    1 tbsp

Cinnamon-Clove Powder                    ½ ts

Star Anise (Badiyan)   Powder            of 1 pc

Fennel Seeds Powder             1 ts

Turmeric Powder                                 1 ts

Oil                                                        1 ts

Salt to taste

For Vegetable:

Oil                                                        2 tbsp

Mustard Seeds                                    ½ ts

Cumin Seeds                                       ½ ts

Tomato chopped                                 1

Mix Vegetable  chopped                     1 bowl

(Preferably Cluster Beans, Green Pigeon Peas, Ridge Gourd (Turiya), Broad Beans, Onion, Green Peas) you can add or remove as your choice.

Skinned and Split Chickpeas              ½ cup

Fresh Coriander Leaves

Method:

Soak Skinned and Split Chickpeas for at least 1 hour.

 

Take all ingredients for Paste in a suitable jar of your mixer and crush to paste. Add littler water as needed.

 

Heat oil in a pan. Add Mustard Seeds and Cumin Seeds. When spluttered, add prepared paste and chopped Tomato. Mix and cook well on medium flame for 3-4 minutes. Add chopped mix Vegetable and soaked split Chickpeas. Add some water as needful. Cover the pan with a lid. Occasionally, remove the lid to turn over the stuff and check whether cooked. When cooked, remove the pan from flame. Sprinkle Fresh Coriander Leaves.

 

Keep the pan covered with the lid and leave it to simmer for approx 5 minutes.

 

Enjoy Kathiyawari (Western Gujarati) Mix Veg without coming to Kathiyawar.
