Mix Veg. in Gravy

Ingredients:

Mix Vegetables chopped                                 1 bowl

(Preferably Carrots, French Beans, Capsicum, Cauliflower, Tomato, Onion, Green Peas)

Can add or remove as your choice.

Cottage Cheese cubes                                   ½ cup

Potato boiled and chopped                             1

Oil                                                                    2 tbsp

For Marinating:

Hung Curd                                                       1 cup

Turmeric Powder                                             ½ ts

Red Chilli Powder                                           1 ts

Tandoori Garam Masala                                 1 ts

Salt to taste

Oil                                                                    1 ts

Lemon                                                             ½

Fresh Coriander Leaves

For Gravy:

Oil                                                                    1 tbsp

Ginger-Garlic-Chilli Paste                               2 tbsp

Cashew Nut-Water Melon Seed Paste           1 tbsp

Blanch Tomato & Onion Paste                        1 cup

(Put Tomato and pilled Onion in a boiling water for 2-3 minutes then crush to paste)

Turmeric Powder                                             1 ts

Red Chilli Powder                                           1 ts

Kitchen King Masala                                       1 ts

Cream                                                             1 tbsp

For Garnishing:

Onion rings / Capsicum rings / Cream / Fresh Coriander Leaves (use as per your choice).

Method:

For Marinating:

Take all ingredients for Marinating in a bowl and mix well.

 

Take little Marinating stuff in a separate bowl. Add Cottage Cheese Cubes and Boiled Potato Cubes. Mix well. Keep a side.

 

In remaining Marinating stuff, add Mix Vegetables, mix well. Leave it for at least 1 hour to get marinated. (Use this time to prepare Gravy).

 

For Gravy:

In another pan, heat oil. Add Ginger-Garlic-Chilli Paste. Add Blanch Tomato and Onion Paste. Mix well. Add Turmeric Powder, Red Chilli Powder, Kitchen King Masala. Mix well and cook well. Add little water as needed. Make sure not leaving water. When oil is getting separated, than it is cooked. Add Cream and continue cooking for 1-2 minutes only. (You can prepare Vegetable simultaneously on another stove).

 

For Mix Vegetable:

Heat oil in a pan on low flame. Add Marinated Mix Vegetables (Please don’t add Cottage Cheese Cubes and Boiled Potato Cubes here) and fry for a while. Cover the pan with a lid. When Vegetable is cooked, remove the pan from the flame.

 

When Gravy is ready, add cooked Mix Vegetables and Marinated Cottage Cheese Cubes and Boiled Potato Cubes, mix well on low flame. No water needed. It may take 2-3 minutes only.

 

Garnish with Onion Rings or Capsicum Rings or Cream or Fresh Coriander Leaves whatever as you like.

 

Enjoy Satisfying Mix Veges with Naan or Paratha or Chapatti and Rice to fill your tummy at full.
