Sabz Makrana

Ingredients:

Oil                                                        2 tbsp

Cumin Seeds                                      1 ts

Hing (Asafoetida Powder)                   Pinch

Garlic chopped                                    1 tbsp

Onion chopped                                    1

Green Chilli Paste                               1 ts

Spinach (Blanched & chopped )         1 cup

Salt to taste

Turmeric Powder                                 ½ ts

Red Chilli Powder                               1 ts

Tomato chopped                                 1

Coriander-Cumin Powder                   1 ts

Garam masala                        1 ts

Kitchen king                                        1 ts

Green peas boiled                              ¼ cup

Capsicum                                            1

Scarlet Gourd / Ivy Gourd (Tindora)    ½ cup

Luffa / Chinese Okra   (Turiya)            ½ cup

Corn boiled                                          ½ cup

Cream                                                 2 tbsp

Fresh Coriander Leaves

Roti / Chapati and / or Steamed or Boiled Rice for serving

 

Method:

Take oil in a pan and fry in it Capsicum, Scarlet Gourd and Luffa. Remove all these from pan when fried and put a side. Leave the oil in the pan.

 

In the same pan, fry Cumin Seed, Asafoetida Powder, Garlic, Onion, Tomato. When partially fried, add all spices and mix well on low flame. Add all vegetables and mix well on low flame. After 3-4 minutes, add cream, mix well on low flame until cooked well.

 

Sprinkle Fresh Coriander Leaves and serve fresh and hot with Roti (Chapati) and/or Steamed or Boiled Rice.
