Spinach Chat / Chatty Spinach

Ingredients:

For Batter:

Refined White Wheat Flour (Maida)                            ½ cup

Rice Flour                                                                    ½ cup

Gram Flour                                                                  2 tbsp

Salt to taste

Red Chilli Powder                                                       1 ts

Turmeric Powder                                                         1 ts

Garam Masala                                                ½ ts

Soda-bi-Carb                                                               Pinch

For Pumpkin Seed Chutney:

Pumpkin Seeds                                                           ½ cup

Fresh Mint Leaves                                                      ½ cup

Fresh Coriander Leaves                                             1 cup

Green Chilli chopped                                                  4

Ginger grated                                                              ½ ts

Lemon                                                                         ½

Sugar                                                                          1 ts

Salt to taste

Other Ingredients:

Oil to fry

Spinach                                                                       100 gm

Spiced Curd                                                                ½ cup

(Add little Salt, Red Chilli Powder, Coriander-Cumin Powder in Curd)

Tamarind-Date Chutney                                              3 tbsp

For Garnishing:

Spiced Peanuts                                                           1 tbsp

Gram Flour Vermicelli (Sev)                                        1 tbsp

(preferably Spinach flavoured)

Method:

For Pumpkin Seed Chutney:

Take all ingredients for Pumpkin Seed Chutney in a suitable chutney making jar of your mixer. Add approx ½  tbsp of water for easy crushing. Operate the mixer up to medium speed until chutney is ready. Check occasionally stopping the mixer and opening the lid of the jar. Use the spoon to gather the stuff stuck on the sides of jar back in the middle of the jar and operate the mixer again. Operate until Chutney is ready.

For batter:

Take Refined White Wheat Flour, Rice Flour, Gram Flour in a bowl. Mix well. Add Salt, Red Chilli Powder, Turmeric Powder, Garam Masala and Soda-bi-Carb. Add water as needed and prepare thick batter.

For spinach pakoda:

Heat oil for deep frying. Dip Spinach leaves in prepared batter and deep fry on low flame.

Assambling :

Arrange deep fried Spinach on a serving plate. Pour spiced Curd, Pumpkin Seed Chutney, Tamarind-Date Chutney.

 

Garnish with Spiced Peanuts and Gram Flour Vermicelli.

 

Serve Fresh.
