Paneer Bhindi Masala – Spiced Okra with Cottage Cheese

Ingredients:

Okra (Lady’s Finger) chopped 200 gm

Poppy Seeds                                       1 tbsp

Peanuts                                               1 tbsp

Sesame Seeds                                    1 tbsp

Red Chilli Powder                               1 tbsp

Turmeric Powder                                 ½ tbsp

Coriander-Cumin Powder                   1 tbsp

Garam Masala                        ½ ts

Aamchur (Mango Powder)                  1 ts

Salt to taste

Oil                                                        3 tbsp

Mustard Seeds                                    ½ ts

Cumin Seeds                                      ½ ts

Asafoetida Powder                              Pinch

Garlic Paste                                        1 ts

Tomato Chopped                                1

Paneer (Cottage Cheese)                   50 gm

Method:

Pan roast Poppy Seeds, Peanuts and Sesame Seeds. Crush all after roasting.

 

Take chopped Okra in a bowl. Mix crushed Poppy Seeds, Peanuts and Sesame Seeds. Add Red Chilli Powder, Turmeric Powder, Coriander-Cumin Powder, Garam Masala and Mango Powder. Mix well.

 

Heat oil in a pan. Add Mustard Seeds, Cumin Seeds, Asafoetida Powder. When popped, add Garlic paste and chopped Tomato. Cook for a minute mixing well. Add Okra, mix well occasionally while cooking at low flame. Make sure to turn over okra from down to up slowly every 1 minute taking care not to crush. Strictly no water please. Water will make okra sticky. When cooked, remove pan from the flame. Add grated Cottage Cheese and mix slowly taking care not to crush okra.

 

Sprinkle grated Cottage Cheese to garnish to serve beautifully. Serve with chapati.
