Sweet Potato with Rabadi

Prep.5 min., Cooking time 20 min., Servings 2

Ingredients:

Sweet Potato boiled                2

Milk                                          ½ cup

Sugar                                      1 tbsp

Milk Powder                            2 tbsp

Amaranth Flour                       2 tbsp

Cardamom Powder                 Pinch

 

Ghee for greasing.

 

Almond and Pistachio for garnishing.

 

Rabadi for serving.

 

Method:

Take boiled Sweet Potato and Milk in a blending jar of your mixer. Blend it well. Remove it in a bowl.

 

Add Sugar, Milk Powder, Amaranth Flour and Cardamom Powder. Whisk it well to prepare batter.

 

Take 1 tbsp of prepared batter in a silicon mould or any microwave compatible mould. Microwave it for 2 minutes. Cup with rough surface will be ready. Unmould and repeat to prepare number of moulds of prepared batter.

 

Arrange micro waved cups on a serving plate.

 

Pour Rabadi on it.

 

Sprinkle Almond and Pistachio to garnish.

 

Serve lukewarm.
