Dhokla Chat

Ingredients:

For Dhokla Flour:

Rice                                                     1/3 cup

Split Bengal Gram                                  1/3 cup

Split Black Gram de-husked                    1 tbsp

Fenugreek                                            ¼ ts

OR

Ready available Dhokla Flour can be used instead of above ingredients     1 cup

Fenugreek finely ground            ¼ ts

For Dhokla:

Curd                                                     1 cup

Soda-bi-Carb                                        Pinch

Oil                                                        1 ts

Ginger-Garlic-Chilli Paste                       1 tbsp

Salt to taste

For Soup:

Green Peas boiled                                 1 cup

Potato boiled and chopped                     1

Oil                                                        1 tbsp

Cinnamon Leaf                                      1

Dry Red Chilli                                        2

Curry Leaves                                        6-8 leaves

Asafoetida Powder                                 Pinch

Ginger-Garlic-Chilli Paste                       1 tbsp

Onion small chopped                              1

Tomato small chopped                            1

Turmeric Powder                                   1 ts

Red Chilli Powder                                  1 ts

Garam Masala                                       1 ts

Salt to taste

Tamarind Pulp                                       1 tbsp

Jaggery grated                                      1 ts

For Assembling:

Mint Chutney

Red Chutney

Tamarind-Date Chutney

Spiced Peanuts

Gram Flour Vermicelli (Sev)

Fresh Coriander Leaves

Onion small chopped

Chat Masala

Method:

For Dhokla Flour:

Take Rice, Split Bengal Gram, Split Black Gram (de-husked) and Fenugreek and make coarse flour. If you are using readily available Dhokla Flour, just add Fenugreek Powder in it.

For Dhokla:

Take Dhokla Flour in a bowl. Add Curd. Leave it for 6 to7 hours for fermenting.

Add Soda-bi-Carb, Oil, Ginger-Garlic-Chilli Paste and Salt. Apply oil on small bowls of a steamer. Fill them with the batter. Steam it for 15-20 minutes. Remove from bowls from steamer. Using knife, remove Dhokla from bowls.

For Soup:

Heat oil in a pan. Cinnamon Leaf, Curry Leaves, Asafoetida Powder and Dry Red Chilli. When spluttered, add Ginger-Garlic-Chilli Paste. Add small chopped Onion. Cook it to soften. Add small chopped Tomato. Mix well. Add Turmeric Powder, Red Chilli Powder, Garam Masala. Salt and mix well. Add Tamarind Pulp and Jaggery. Mix well. Add boiled Green Peas and Pototo. Add little water. Cook it for 4-5 minutes on medium flame to make it thick soup.

For Assembling:

Arrange Dhokla in a serving bowl. Pour Soup on Dhokla. Pour Mint Chutney, Red Chutney and Tamarind-Date Chutney. Sprinkle Spiced Peanuts, Gram Flour Vermicelli, small chopped Onion and Fresh Coriander Leaves. Sprinkle little Chat Masala.
