Lila Chana no Halvo – Green Chickpeas Halvo

For 2 persons

 

Ingredients:

Green Chickpeas 1 cup

Milk 1 cup

Ghee ½ cup

Milk Khoya grated 100 gm

Sugar 100 gm

Cardamom Powder Pinch

Almond Flakes for garnishing

 

Method:

Take Milk in a saucepan. Add Green Chickpeas. Boil on low-medium flame. Stir it occasionally to avoid boiling over of Milk. When Green Chickpeas are softened enough, remove the saucepan from the flame. Strain it. Let Green Chickpeas cool off somehow. Then mash boiled Green Chickpeas.

 

Heat Ghee in a pan. Add mashed Green Chickpeas and semi fry stirring it slowly taking care of not getting it burnt. Add grated Milk Khoya, Sugar and Cardamom Powder. Mix well and cook well until the stuff becomes soft loaf.

 

Arrange the loaf on a serving plate.

 

Garnish with Almond Flakes.

 

Serve Fresh and Hot.

Aloe Vera Halvo – Aloe Vera Pudding

Preparation time 10 minutes

Cooking time 20 minutes

For 4 Persons

Ingredients:

Aloe Vera 100 gm

Ghee 100 gm

Milk 1 cup

Milk Khoya 200 gm

Sugar 100 gm

Edible Gum fried ½ cup

Almond broken pieces ½ cup

Nutmeg Powder 1 ts

Cardamom Powder 1 ts

Dried Ginger Powder 1 tbsp

Poppy Seeds 1 tbsp

 

Method:

Heat Ghee on low flame. Roast Aloe Vera brownish.

 

Then, increase the flame to medium. add Milk. Milk will curdle. Continue on medium flame while stirring until the separated water from Milk is steamed away.

 

When no water is seen, add Milk Khoya and continue until Milk Khoya is cooked well.

 

Add Sugar and continue stirring on medium flame until the mixture becomes thick.

 

Reduce the flame to low. Add fried Edible Gum, broken pieces of Almonds, Nutmeg Powder, Cardamom Powder, Dried Ginger Powder and Poppy Seeds. Mix very while on low flame for 2-3 minutes.

 

Take a lump of Aloe Vera Halvo on a serving plate.

 

Garnish with sprinkle of Almond Flakes and Poppy Seeds.

Rasiya Muthiya – Saucy Fist

Preparation time 10 minutes

Cooking time 10 minutes

For 2 persons

 

Ingredients:

For Fist (Muthiya):

Whole Wheat Flour ½ cup

Gram Flour ¼ cup

Grated Bottle Gourd ½ cup

Oil 1 tbsp

Turmeric Powder ½ ts

Red Chilli Powder ½ ts

Salt to taste

Soda-bi-Carb Pinch

For Sauce (Ras):

Buttermilk 2 cup

Gram Flour 1 tbsp

Oil 2 tbsp

Mustard Seeds 1 ts

Cumin Seeds 1 ts

Asafoetida Powder Pinch

Curry Leaves 5-6

Garlic Chutney homemade 1 ts

Turmeric Powder ½ ts

Salt to taste

Fresh Coriander Leaves 1 tbsp

 

Onion Rings for garnishing

 

Method:

For Fist (Muthiya):

Take Whole Wheat Flour and Gram Flour in a bowl. Add Turmeric Powder, Red Chilli Powder, Salt and Soda-bi-Carb. Mix well. Add Oil and mix well. Add grated Bottle Gourd. Mix well and knead semi stiff dough. Add very little water only if needed.

 

For Sauce (Ras):

Take Buttermilk in a bowl. Add ½ cup of Water and Gram Flour. Mix very well. Please don’t leave any lump of Gram Flour. If it needs, use blender.

 

Heat Oil in a pan. Add Mustard Seeds, Cumin Seeds, Asafoetida Powder and Curry Leaves. When spluttered, add Garlic Chutney and Turmeric Powder and mix well. Add prepared mixture of Buttermilk and Salt. Set flame to high. When it starts to boil, put number of small fist of prepared Dough in boiling Sauce. Continue boiling for 8-10 minutes on high flame. Partially cover the pan with a lid while boiling.

 

When fists are cooked, Saucy Fist (Rasiya Muthiya) is ready.

 

Transfer in a serving bowl.

 

Garnish with sprinkle of Fresh Coriander Leaves and Onion Rings.

 

Serve Hot.

Sweet Popcorn Pizza

Preparation time 5 minutes

Cooking time 5 minutes

Servings 4

 

Ingredients:

Sugar ½ cup

Cream ¼ cup

Butter 2 tbsp

Popcorn 1 bowl

For garnishing:

Mix Nuts roasted

(Cashew Nuts, Almonds, Walnuts, Peanuts)

Chocolate Sauce

White Chocolate Sauce

Colourful Sugar Sprinkler

 

Method:

Take Sugar in a not-stick pan. Spread Sugar well in the pan and put the pan on low flame. When Sugar starts to melt, stir it slowly and let it be on flame to melt completely. When, melted completely, add Cream and Butter and stir slowly and continuously. When it changes the colour to light brownish, switch off the flame.

 

Add Popcorn and mix well. Set in a greased round plate. Leave it to cool down for 10-15 minutes.

 

Unmould from the round plate and arrange in a serving plate.

 

Sprinkle roasted Mix Nuts. Pour Chocolate Sauce and White Chocolate Sauce spreading over it.

 

Garnish with Colourful Sugar Sprinkler.

Bread Pudding of Leftover Sweets

Preparation time 10 minutes

Cooking time 10 minutes

Servings 4

 

Ingredients:

Leftover Sweets                      100 gm

(Kaju Katri, Peda etc.)

Milk                                          1 cup

Cream                                     1 cup

Bread Slices                            10

Dry Nuts mixed                       2 tbsp

(Cashew Nuts, Raisins etc.)

Sweet Bundi                            1 cup

Sugar Caramel for garnishing

 

Method:

Take Leftover Sweet and Milk in wet grinding jar of mixer. Blend it well. Remove it in a pan. Add Cream and put the pan on flame to boil. Stir while boiling to avoid boil over. Boil until it thickens.

 

Cut to remove hard border of all Bread Slices and make square pieces of Bread Slices.

 

Grease baking dish with Ghee or Butter.

 

Arrange half of pieces of Bread Slices on a greased baking dish. Pour half of prepared Sweet mixture all over Bread pieces on baking dish. Sprinkle mixed some Dry Nuts and Sweet Bundi.

 

Repeat to make another layer.

 

Pre-heat oven. Bake for 20 minutes at 180°.

 

After baking, take it in 1 or 2 serving cups. Sprinkle Sugar. Caramelize Sugar with kitchen torch.

 

Serve Fresh and Hot. Also, it can be served fridge cold.

Shahi Shikanji

Preparation time 5 minutes

Cooking time 10 minutes

Ingredients:

Milk 1 cup

Sweetened Condensed Milk ¼ cup

Saffron threads 3-4

Nutmeg Powder Pinch

Mace Blade Powder Pinch

(Javantri in Gujarati)

Cardamom Powder Pinch

Hung Curd ¼ cup

Milk Cream 1 tbsp

Cashew Nuts pieces ½ tbsp

Almonds chips ¼ tbsp

Pistachio pieces ¼ tbsp

Raisins ¼ tbsp

 

Method:

Take Milk and Sweetened Condensed Milk in a pan and put it on medium flame to boil. When it starts to boil, add Saffron threads, Nutmeg Powder, Mace Blade Powder, Cardamom Powder and continue boiling while stirring occasionally and reducing-increasing flame to boil it repeatedly until it becomes thick.

 

Then, leave it to cool down and refrigerate for at least 2 hours.

 

Take it in a blending jar of your mixer. Add Hung Curd and Milk Cream. Just churn it for 5-7 seconds only.

 

Mix Cashew Nuts pieces, Almonds chips, Pistachio pieces and Raisins.

 

Refrigerate it for at least 1 hour.

 

Take it in a serving glass.

 

Garnish with few pieces of Cashew nuts and Pistachio.

 

Serve chilled.

Poppy Seeds 2 tbsp

Milk 1 cup

Condensed Milk 2 tbsp

Almond Paste 1 tbsp

Almond Chips ¼ cup

Cardamom Powder ¼ ts

Almond Chips and Holy Basil Leaves for garnishing

 

Method:

Heat Ghee in a pan on low flame.

 

Add Poppy Seeds and roast well.

 

Add Milk and boil while stirring occasionally.

 

Add Condensed Milk, Almond Paste, Almost Chips and Cardamom Powder and continue boiling on low-medium flame while stirring occasionally to prevent boil over until it becomes little thick.

 

Remove it in a serving bowl.

 

Garnish with few Almond Chips and 1 or 2 Holy Basil Leaves.

 

Serve Hot and Fresh.

Dariya na Ladu – Roasted Chickpeas Laddu

Prep.10 min., Servings 6

Ingredients:

            Roasted Chickpeas (Dariya)-skinned and split          1 cup

            Ghee                                                                           ½ cup

            Jaggery like thick powder (not lumps)                       2 tbsp

            Fine Powder of Roasted Chickpeas (skinned and split) for garnishing

Method:

Crush skinned and split Roasted Chickpeas in a dry blending jar or your mixer. Crush it to coarse texture. Remove in a bowl after crushing.

Add melted Ghee and Jaggery. Mix very well

Make number of balls of size and shape of your choice.

Sprinkle fine powder of Roasted Chickpeas.

Serve Fresh.

Can be stored in dry and normal temperature place.

Instant Suji Dhokla – Instant Rava Dhokla – Instant Semolina Dhokla

Prep.5 min., Cooking time 20 min., for 2 Persons

Ingredients:

                Semolina                             1 cup

                Curd                                      1 cup

                Ginger-Chilli Paste           1 ts

                Salt to taste

                Fruit Salt                              1 tbsp

                Oil                                           2 tbsp

                Mustard Seeds                 1 ts

                Dry Red Chilli                      2

                Sesame Seeds                   1 ts

                Curry Leaves                      5

                Green Chilli chopped      2

                Fresh Coriander Leaves for garnishing

Method:

Take Semolina in a mixing bowl.

Add Curd and littler as needful to prepare batter for Dhokla. Leave it to rest for 10 minutes.

Meanwhile, take water in a steamer and put it on flame to boil.

Put an Oil greased plate in the steamer.

In Dhokla batter, add Salt, Gigner-Chilli Paste and Fruit Salt. Mix well.

Pour prepared batter in the plate in heated steamer.

Cover the steamer and steam for 15 minutes.

When steamed, remove the plate from the steamer and leave it to cool off.

When cooled off, cut prepared Dhokla in medium size pieces.

Heat Oil in a pan.

Add Mustard Seeds, Dry Red Chilli, Sesame Seeds, Curry Leaves and chopped Green Chilli.

When crackled, pour all over prepared Dhokla.

Garnish with Fresh Coriander Leaves.

Take few pieces on a serving plate.

Serve Fresh for its best taste.
