Garlic Spinach Soup

Preparation time 15 minutes

Cooking time 20 minutes

Serving 1

 

Ingredients:

Garlic Buds of 1 garlic

Onion chopped pcs of 1 onion

Spinach 1 bowl

Green Chilli chopped 1

Butter 2 tbsp

Capsicum finely chopped 1

Oregano 1 ts

Chilli Flakes 1 ts

Holy Basil Leaves 5-6

Lemon Juice of ½ lemon

Corn Flour Slurry 1 tbsp

Salt

Holy Basil Leaves to garnish 2-3

 

Method:

Use wire mash to grill whole Garlic Buds with skin. Grill on low flame while turning Garlic Buds to roast all sides. Then, peel all grilled Buds and chop in big pieces.

 

Heat 1 tbsp of Butter in a pan on low flame. Add chopped Garlic, Onion and Green Chilli. When sautéed, add Spinach. Mix well and cook for 5-6 minutes on low flame while stirring. Remove the pan from the flame and leave it to cool down.

 

Then, take it in blending jar of mixer. Add Holy Basil Leaves. Add 1 cup of water. Blend it very well at high speed.

 

Strain it. Keep it a side.

 

Heat 1 tbsp of Butter in another pan on low flame. Add chopped capsicum. When sautéed, add prepared Spinach mixture. Add Oreagno, Chilli Flakes, Salt and Corn Flour Slurry. Stir it occasionally while on low flame for 4-5 minutes. Add Lemon Juice. Stir it and remove the pan from the flame.

 

Take it in a serving bowl.

 

Garnish with 2-3 Holy Basil Leaves.

 

Serve Hot.

Sea Breeze

Ingredients:

Crushed Ice

Ginger Juice  1 ts

Lemon Juice 1 ts

Blue Curacao Syrup 2 tbsp

Green Apple Syrup 1 tbsp

Lemon Slice

Fresh Mint Leaves

Soda Water

 

Method:

Take Crushed Ice in a serving glass.

 

Add Ginger Juice, Lemon Juice, Blue Curacao Syrup and Green Apple Syrup.

 

Add Lemon Slice and Fresh Mint Leaves.

 

Fill in remaining glass with Soda Water.

 

Serve immediately.

Satvik Thali

Satvik Buttermilk

Preparation time 2 minutes

Servings 2

 

Ingredients:

Curd 1 cup

Ginger small piece 1

Curry Leaves 5

Fresh Coriander Leves 1 tbsp

Black Salt ¼ ts

Cumin Powder Pinch

Black Pepper Powder Pinch

 

Method:

Take Ginger, Curry Leaves and Fresh Coriander Leaves in a Mortar and crush with Pestle. Keep prepared paste a side.

 

Take Curd in a bowl or a vessel. Churn it very well using a hand blender.

 

Add prepared paste in it.

 

Add Black Salt, Cumin Powder and Black Pepper Powder. Churn it a little to mix very well.

 

Fill it in a serving glass.

 

Garnish with 1 or 2 Fresh Coriander Leaves.

 

Satvik Buttermilk is ready.

 

Serve along with Satvik Thali.

 

Satvik Salad

 

Preparation time 5 minutes

Cooking time 2 minutes

For 2 Persons

 

Ingredients:

Bottle Gourd 50g

Black Gram Sprout ¼ cup

Green Gram Sprout ½ cup

Honey 1 ts

Black Salt Powder ½ ts

Black Pepper Powder ½ ts

Lemon Juice ½ ts

Fresh Coriander Leaves

 

Method:

Peel and fine chop Bottle Gourd.

 

Then, parboil it.

 

Then, drain water and take parboiled Bottle Gourd in a bowl.

 

Add Black Gram Sprout and Green Gram Sprout. Mix well.

 

Add Honey and mix well.

 

Add Black Salt Powder and Black Pepper Powder. Mix well.

 

Add Lemon Juice and mix well.

 

Add Fresh Coriander Leaves and mix well.

 

Garnish with 2-3 Fresh Coriander Leaves.

 

Satvik Salad is ready.

 

Serve Fresh along with Satvik Thali.

 

Satvik Dal

 

Preparation time 2 minutes

Cooking time 15 minutes

For 2 Persons

 

Ingredients:

Skinned Split Pigeon Peas soaked ½ cup

Turmeric Powder 1 ts

Rock Salt to taste (Sindhalun)

Ginger finely chopped 1 ts

Ghee 1 tbsp

Cumin Seeds ½ ts

Curry Leaves

Jaggery 1 tbsp

Lemon Juice 1 tbsp

 

Method:

In a clay pot, take soaked Skinned Split Pigeon Peas.

 

Add Turmeric Powder, Rock Salt and finely chopped Ginger.

 

Add water approx. 1 cup of water. Mix very well and cook on low flame.

 

When it is about to be cooked well, on another flame, heat Ghee in a pan.

 

Add Cumin Seeds and Curry Leaves. When crackled, immediately, add this tempering in boiling Dal on another flame.

 

When Dal is boiled well, add Jaggery and continue cooking on low flame for further 2 to 3 minutes only. Then remove from flame.

 

Add Lemon Juice and mix well.

 

Satvik Dal is ready.

 

Serve as a part of Satvik Thali.

 

Satvik Mix Vegetable:

 

Preparation time 5 minutes

Cooking time 15 minutes

For 2 Persons

 

Ingredients:

Cauliflower 100g

Carrot 1

Potato 1

Rock Salt to taste (Sindhalun)

 

For Paste:

Tomato 1

Fresh Coconut grated ½ cup

Green Chilli 1

Ginger small piece 1

Cumin Seeds 1 ts

 

Method:

Peel Carrot and Potato.

 

Chop Cauliflower, Carrot and Potato in big pieces.

 

Take them in a clay pot.

 

Add Rock Salt and approx. ½ cup of water and cook on low flame.

 

Meanwhile, take all listed ingredients for Paste in jar of mixer and crush to fine paste.

 

When Mix Vegetable is cooked well, add prepared paste in it and mix very well taking care of not crushing vegetables.

 

Switch off flame and cover the pot with a lid and leave it for approx. 5 minutes.

 

Satvik Mix Vegetable is ready.

 

Serve as a part of Satvik Thali.

 

Satvik Roti / Beetroot Roti

 

Preparation time 5 minutes

Cooking time 5 minutes

Servings 4

 

Ingredients:

Whole Wheat Flour ½ cup

Beetroot Puree as required

Ataman (dry flour)

 

Method:

Crush Beetroot and prepare puree and take it in a kneading bowl.

 

Add Whole Wheat Flour gradually as needed and knead dough good enough to roll Roti. Please, don’t add Oil or water at all.

 

Put a flat clay pan (clay tava) on high flame to preheat.

 

Pinch little dough and make a ball of it and roll round Roti. Use ataman (dry flour) for easy rolling.

 

Roast both sides well of rolled Roti on preheated flat clay pan.

 

Prepare number of Roti from dough.

 

Serve as a part of Satvik Thali.

Gahat ka Shorba

Preparation time 5 minutes

Cooking time 20 minutes

Servings 2

 

Ingredients:

Oil 1 ts

Cumin Seeds 1 ts

Coriander Granules ½ ts

Cinnamon 1

Clove buds 4

Star Anise 1

Jakhiya 1 ts

(Asian Spider Weeds / Wild Mustard Seeds)

(optionally, Mustard Seeds can be used)

Asafoetida Powder Pinch

Ginger-Chilli-Garlic Paste 1 tbsp

Onion chopped 1

Tomato chopped 1

Fresh Coriander Stems 1 tbsp

Kalthi (Gahat) soaked ½ cup

(Horse Gram)

Salt to taste

Black Pepper Powder ½ ts

Lemon Juice of 1 lemon

 

Method:

Heat Oil in a pressure cooker on high flame. Add Cumin Seeds, Coriander Granules, Cinnamon, Clove buds, Star Anise, Jakhiya and Asafoetida Powder. When crackled, add Ginger-Chilli-Gralic Paste and chopped Onion. When Onion softens, add chopped Tomato and cook for 2-3 minutes. Add Fresh Coriander Stems and soaked Horse Gram. Add approx 2 glasses of water. Add Salt. Pressure cook up to 3 or 4 whistles.

 

Leave pressure cooker to cool down for approx 10-15 minutes.

 

Open the pressure cooker. Strain and collect the water in a bowl.

 

Add Black Pepper Powder and Lemon Juice in strained water. Mix well.

 

Serve Fresh.

Hot Shots

Ingredients:

Milk 2 cup

Cream ½ cup

White Chocolate ½ cup

Milk Powder 2 tbsp

Vanilla Essence 2 drops

Strawberry Emulsion 2 drops

Mint Emulsion 2 drops

 

Decorating Edible Flowers for garnishing

 

Method:

Take Milk in a pan.

 

Add Cream, White Chocolate and Milk Powder. Mix well.

 

Boil it while stirring occasionally.

 

Blend it very well using hand blender. It will make froth (foam) on the top. Skim froth.

 

After removing froth, divide Milk in 3 equal parts.

 

Add Vanilla Essence in 1 part of Milk. Add in 1 serving glass.

 

Add Straberry Emulsion in 1 part of Milk. Add in another serving glass.

 

Add Mint Emulsion in 1 part of Milk. Add in another serving glass.

 

Garnish all 3 glasses with Decorating Edible Flowers.

 

Have a Hot Shot of Flavoured Hot Chocolate.

Latte Macchiato

Preparation time 5 minutes

Ingredients:

Milk ½ cup

Cream 1 cup

Milk Powder 2 tbsp

Sugar 2 tbsp

Coffee Powder 3 tbsp

Melted Chocolate 1 tbsp

 

Method:

Take Coffee Powder in a bowl. Add ½ cup of hot / boiled water and mix very well.

 

In another bowl, take Milk, Cream, Milk Powder and Sugar. Boil it while stirring occasionally. When boiled, remove from the flame. Using handy blender, blend it to frothy.

 

Take Melted Chocolate in a serving glass. Add prepared frothy Milk Mixture. Add prepared Coffee Water.

 

Serve immediately for fresher taste and serve with Honey Ginger Flat Cookies for better taste.

Piyush

Preparation time 5 minutes

Ingredients:

Shreekhand 2 cup

(Preferably Plain Shreekhand)

Buttermilk 2 cup

Sugar Powder 2 tbsp

Cardamom powder Pinch

Nutmeg Powder Pinch

Saffron Pinch

Pistachio pieces for garnishing

 

Method:

Take Shreekhand and Buttermilk in a bowl. Whisk it well. Then transfer it into a juicer jar of your mixer.

 

Add Sugar Powder, Cardamom Powder, Nutmeg Powder and Saffron.

 

Blend for approx 30-40 seconds and make sure that all ingredients are blended very well.

 

Remove the blended mixture in serving glasses.

 

Garnish with Pistachio pieces.

 

Refrigerate for approx 45-60 minutes.

 

Serve fridge cold.

Tomato Dhaniya Shorba

Preparation time 10 minutes

Ingredients:

Oil 1 ts

Black Pepper 5-7

Whole Coriander 1 tbsp

Cumin Seeds 1 tbsp

Cinnamon 2 pcs

Big Cardamom 1

Clove buds 5

Onion chopped 1

Garlic chopped 5 buds

Carrots chopped 2 tbsp

Tomato chopped 5-6

Ginger Paste 1 ts

Salt to taste

Fresh Coriander Stalks chopped ½ cup

Kashmiri Red Chilli Paste 1 ts

Butter 1 ts

Clove-Cinnamon Powder Pinch

 

Garlic Breads for serving

 

Method:

Heat Oil in a pan.

 

Add Black Pepper, Whole Coriander, Cumin Seeds, Cinnamon 1 pc, Big Cardamom and Clove Buds and sauté well.

 

Add chopped Onion, Garlic, Carrots, Tomato and Ginger Paste. Mix well.

 

Add littler water and Salt. Mix well.

 

Cover the pan with a lid and cook on medium flame until Tomatoes are cooked well.

 

Add chopped Fresh Coriander Stalks and Kashmiri Red Chilli Paste. Mix well.

 

Add 1 glass of Water and let it boil on medium flame for a while.

 

Strain the mixture and collect Spiced Water in a bowl. Keep it a side.

 

Heat Butter in a pan on low flame.

 

Add 1 pc of Cinnamon.

 

When spluttered, add Spiced Water and Clove-Cinnamon Powder. Let it boil for 3-4 minutes on medium flame.

 

Serve Hot and Fresh with Garlic Breads.

Kashmiri Pink Tea

Preparation time 3 minutes

Cooking time 20 minutes

Servings 2

 

Ingredients:

Water 1 cup

Kashmiri Green Tea 1 tbsp

Soda-bi-Carb ½ ts

Ice Cubes 5-6

Cardamom granules of 2 cardamom

Star Anise 1

Cinnamon 1 small piece

Milk 1 cup

Sugar Powder 1 tbsp

Fennel Seeds Powder ½ ts

Salt Pinch

Almond and Pistachio for garnishing

 

Method:

Take 1 cup of Water in a pan and put it for boiling. Add Kashmiri Green Tea while boiling. When boiled, add Soda-bi-Carb and continue boiling while stirring for 2-3 minutes. Switch off the flame.

 

Add Ice Cubes. Switch on the flame again to boil it again. Add Cardamom granules, Star Anise and Cinnamon while boiling. When boiled very well, strain it and put strained water again for boiling. Add 1 cup of Milk while boiling and boil it repeatedly 5-7 times while stirring to prevent boil over.

 

Strain it in a cup or glass.

 

Add Sugar Powder, Fennel Seeds Powder and Salt. Stir it to mix well.

 

Take it in a serving cup of glass.

 

Sprinkle Almond and Pistachio pieces to garnish.

 

Serve Fresh.
