Farali Pakoda

Preparation time 5 minutes

Cooking  time 10 minutes

For 2 Persons

 

Ingredients:

Potato 1

Sweet Potato 1

Yam (Suran) 100g

Ginger-Chilli finely chopped 3 tbsp

Black Pepper Powder ½ ts

Amaranth Flour 1 cup

Lemon Juice ½ ts

Salt to taste

Oil to deep fry

 

Green Chutney for serving

 

Method:

Grate Potato, Sweet Potato and Yam and mix.

 

Add finely chopped Ginger-Chilli, Black Pepper Powder, Lemon Juice and Salt. Mix well.

 

Add and mix Amaranth Flour as needed to prepare thick mixture.

 

Heat Oil to deep fry.

 

Put number of small lumps of prepared mixture in heated oil to deep fry.

 

Flip when necessary to deep fry well all around.

 

Fry to dark brownish to make crispy.

 

Serve hot with Green Chutney.

Aloe Vera Halvo with Bottle Gourd (Dudhi / Lauki)

Preparation time 5 minutes

Cooking time 15 minutes

Serving 2

 

Ingredients:

Aloe Vera 100 gm

Ghee 50 gm

Bottle Gourd grated 250 gm

(squeeze grated Bottle Gourd to remove excess water)

Milk ½ cup

Milk Khoya (Mawa) grated 100 gm

Sugar 100 gm

Cashew Nuts ½ cup

Almonds 2 tbsp

Dry Black Grapes (Black Raisins) 1 tbsp

Cardamom granules Powder 1 ts

Nutmeg Powder 1 ts

Dry Ginger Powder 1 tbsp

Method:

Heat Ghee in a pan. Add Aloe Vera and semi fry it. Add grated Bottle Gourd and continue frying on low-medium flame. When moisture of Bottle Gourd gets burnt and starts to look drying, add Milk and cook for some minutes until Milk gets evaporated, add Milk Khoya, Sugar, Cashew Nuts, Almonds, Black Raisins, Cardamom Granules Powder, Nutmeg Powder, Dry Ginger Powder. Keep mixing very well while continue cooking on slow-medium flame until it becomes a soft lump.

 

Remove in a serving bowl.

 

Garnish with pieces of Cashew Nuts, Almonds and Black Raisins.

Hariyali Sabudana Khichdi

Preparation time 10 minutes

Cooking time 5 minutes

For 2 Persons

 

Ingredients:

For Paste:

Fresh Coconut grated ½ cup

Green Chilli 3

Fresh Coriander Leaves ½ cup

Lemon Juice of 1 Lemon

Sugar 1 tbsp

Salt to taste

 

For Tempering:

Oil 1 tbsp

Cumin Seeds 1 ts

Green Chilli chopped 1

Curry Leaves 5

Potato boiled and chopped 1

Tapioca Sago (Sabudana) soaked 1 cup

Roasted Peanuts crushed 2 tbsp

 

Method:

For Paste:

Take all listed ingredients for Paste in a jar of mixer.

 

Crush to fine Paste. Keep it a side.

 

For Tempering:

Add 1 tbsp of Oil in soaked Sago.

 

Mix prepared Paste with soaked Sago. Keep it a side.

 

Heat Oil in a pan.

 

Add Cumin Seeds, chopped Green Chilli and Curry Leaves.

 

When crackled, add boiled and chopped Potato and Salt. Mix well and cook until Potato is cooked well.

 

Then, add Sago and cook while mixing slowly on low flame to prevent burning and sticking at the bottom of the pan.

 

Now, add crushed Roasted Peanuts and mix well and continue cooking for a while on low flame.

Farali Bhakharwadi / Bhakharwadi for Fasting

Preparation time 10 minutes

Cooking time 10 minutes

Yield 20 to 25 pcs

 

Ingredients:

For Dough:

Amaranth Flour 1 cup

Oil 1 tbsp

Sesame Seeds 1 tbsp

Salt to taste

For Stuffing:

Raw Banana boiled 1

Ginger-Chilli Paste 1 tbsp

Dry Coconut grated ¼ cup

Sesame Seeds crushed 1 tbsp

Fennel Seeds Powder 1 ts

Garam Masala 1 ts

Peanuts Powder ¼ cup

Lemon Juice of 1 lemon

Sugar 1 tbsp

Oil to deep fry

Green Chutney for serving (optional)

 

Method:

Take Amaranth Flour in a bowl. Add Sesame Seeds and Salt. Mix well. Add Oil and mix well. Knead stiff dough adding littler water slowly as needed. Keep a side for 8-10 minutes. Meanwhile prepare stuffing.

 

Take all listed ingredients for stuffing in a bowl. Crush boiled Raw Banana while mixing everything very well.

 

Roll 2 or 3 thin and round chapatti of prepared dough. Spread prepared stuffing on each chapatti one bye one. Roll chapatti to wrap stuffing. Cut prepared rolls in small pieces.

 

Heat Oil to deep fry. Deep fry all pieces to light brownish. Turn over pieces while deep frying to fry them all around.

 

Optionally, arrange few Bhakharwadi on a serving plate. Pour Green Chutney spreading over them.

 

Serve Hot for its best taste.

Badam Puri / Almond Puri

Preparation time 10 minutes

Cooking time 5 minutes

Baking time 20 minutes

Servings 6

 

Ingredients:

Almond ½ cup

Milk 2 tbsp

Saffron Pinch

Cardamom ½ ts

Sugar 2 tbsp

Milk Powder 2 tbsp

 

Method:

Crush Almond to fine powder and keep a side.

 

Mix Saffron with Milk.

 

Mix in a pan, Milk with Saffron, Cardamom, Sugar and just heat on low flame (don’t boil) to melt Sugar.

 

Then, add Almond powder and stir continuously while on low flame. When it thickens, remove from flame.

 

Now, add Milk Powder and prepare semi stiff mixture which can be rolled to prepare Puri (small round thick flat bread).

 

Spread a clean and transparent plastic sheet on a flat surface.

 

Prepare a big ball of prepared Almond mixture and flatten it pressing lightly between two palms and put it on the plastic sheet.

 

Roll it giving a thick big round shape.

 

Out of it, cut number of small round pieces using cookie cutter.

 

Lay a butter paper on a baking tray and arrange all pieces on it.

 

Preheat oven.

 

Put prepare baking tray in preheat oven and bake for 20 minutes at 180°.

 

After removing from oven, leave them for few minutes to cool off.

 

Then, store in an airtight container to use anytime you need.

 

Keep always available to serve abrupt visitors or kids at home asking for something to eat untimely or even for munching on a fasting day.

Sabudana Vada

Preparation time 10 minutes

Cooking time 10 minutes

For 4 Persons

 

Ingredients:

Tapioca Sago (Sabudana) soaked 1 cup

Potato boiled peeled 2

Ginger-Chilli Paste 1 tbsp

Amaranth Flour 2 tbsp

Lemon ½

Sugar 1 tbsp

Salt to taste

Roasted Peanuts ¼ cup

 

Oil to deep fry

 

Farali Chutney for serving

 

Method:

Crush Roasted Peanuts just to break them. Please don’t crush to coarse powder. Keep a side.

 

Take boiled and peeled Potato in a bowl and mash them.

 

Add soaked Tapioca Sago (Sabudana), Ginger-Chilli Paste, Amaranth Flour, Lemon Juice, Sugar, Salt and crushed Roasted Peanuts. Mix very well. It will become stiff mixture.

 

Make number of balls of prepared mixture and keep a side.

 

Heat Oil to deep fry on high flame.

 

Deep fry all prepared balls in heated Oil to light brownish to make soft or dark brownish to make crunchy. Roll all balls in heated Oil while frying to fry them all around.

 

Serve fresh and hot with Farali Chutney.

Aadu no Halvo / Ginger Halvo

Preparation time 5 minutes

Cooking time5 minutes

For 5 Persons

 

Ingredients:

Ghee 1 tbsp

Ginger chopped 100g

Milk Khoya 100g

Sugar ¼ cup

Dry Coconut grated ¼ cup

Almond chips for garnishing

 

Method:

Crush chopped Ginger in wet grinding jar of mixer. Add little milk only if needed.

 

Heat Ghee in a pan. Sauté crushed Ginger.

 

When sautéed well, add Milk Khoya and continue sautéing.

 

When sautéed well, add Sugar and continue cooking on low flame while stirring occasionally until Sugar melts.

 

Add grated Dry Coconut and mix well.

 

Take prepared Halvo on a serving plate.

 

Garnish with Almond Chips.

 

Serve Fresh and Hot.

Tapkir no Halvo-Karachi Halvo

Preparation time 0 minutes

Cooking time 6 minutes

Yield 8-10 pcs

 

Ingredients:

Sugar 1 cup

Lemon Juice ¼ ts

Food Colour of choice ¼ ts

Arrowroot Powder ½ cup

Ghee 4 tbsp

Mix Dry Fruit ½ cup

(Cashew Nuts, Almonds, Pistachio. All broken pieces)

Cardamom Powder ½ ts

Cardamom Granules ½ ts

 

 

Method:

Take Sugar in a microwave compatible bowl. Add 1 cup of water and Lemon Juice. Microwave it for 1 minute. Then, add Food Colour of choice. Stir to mix it. Keep a side.

 

Take Arrowroot Powder in a microwave compatible bowl. Add 2 cups of water. Microwave it for 1 minute.

 

Add prepared Sugar Water in Arrowroot Powder mixture. Mix very well as well as whisking. Make sure of no lump.

 

Add 1 tbsp of Ghee in it. Stir it well. Microwave it for 30 seconds.

 

Again, add 1 tbsp of Ghee, stir it well. Microwave it for 1 minute.

 

Once again, add 1 tbsp of Ghee, Cardamom Powder and Cardamom Granules. Stir well. Microwave it for 1 minute.

 

Then, add Mix Dry Fruits and mix well. Microwave it for 1 minute.

 

Set the prepared mixture in a greased mould or a greased flat bottom plate. Leave it to cool down.

 

Cut in size and shape of choice.

 

Remove the pieces from the mould.

 

Enjoy immediately or store to enjoy anytime later.

Hot Shots

Ingredients:

Milk 2 cup

Cream ½ cup

White Chocolate ½ cup

Milk Powder 2 tbsp

Vanilla Essence 2 drops

Strawberry Emulsion 2 drops

Mint Emulsion 2 drops

 

Decorating Edible Flowers for garnishing

 

Method:

Take Milk in a pan.

 

Add Cream, White Chocolate and Milk Powder. Mix well.

 

Boil it while stirring occasionally.

 

Blend it very well using hand blender. It will make froth (foam) on the top. Skim froth.

 

After removing froth, divide Milk in 3 equal parts.

 

Add Vanilla Essence in 1 part of Milk. Add in 1 serving glass.

 

Add Straberry Emulsion in 1 part of Milk. Add in another serving glass.

 

Add Mint Emulsion in 1 part of Milk. Add in another serving glass.

 

Garnish all 3 glasses with Decorating Edible Flowers.

 

Have a Hot Shot of Flavoured Hot Chocolate.

Batata nu Aadu varu Shak / Ginger Potato

Preparation time 3 minutes

Cooking time 10 minutes

Serving 1

 

Ingredients:

Potato boiled 4

Ghee 3 tbsp

Cumin Seeds 1 ts

Fennel Seeds 1 ts

Cinnamon Leaves 2

Cinnamon 1 small pc

Clove Buds 4-5

Ginger-Chilli Paste 2 tbsp

Fennel Seeds Powder 1 tbsp

Garam Masala 1 ts

Black Pepper Powder 1 ts

Black Salt Powder 1 ts

Lemon Juice of 1 lemon

Grated Ginger to garnish 1 tbsp

 

Method:

Heat Ghee in a pan on low flame. Add Cumin Seeds, Fennel Seeds, Cinnamon Leaves, Cinnamon and Clove Buds. When spluttered, add Ginger-Chilli Paste, stir it. Add 3 boiled Potato. Mix well. Add Fennel Seeds Powder, Garam Masala, Black Pepper Powder, Black Salt Powder and Lemon Juice. Mix well. Let it be cooked on low flame.

 

Meanwhile, take remaining 1 boiled Potato in a small bowl. Add 3-4 tbsp of water and crush the Potato in water.

 

Add crushed boiled Potato in the pan on low flame. Mix well and continue cooking for 4-5 minutes.

 

Sprinkle grated Ginger to garnish.

 

Serve Hot.

 

Ginger-Potato can be Enjoyed solely or with Roti or Naan or Black Gram Puri.
