Pina Colada Cookies – Nankhatai

Prep.10 min., Cooking time 20 min., Yield 15 pcs.

Ingredients:

Refined White Wheat Flour (Maida)                            1 cup

Semolina (Sooji / Ravo)                                              1 cup

Sugar Powder                                                             1 cup

Ghee                                                                           1 cup

Dry Coconut Powder                                                   ¼ cup

Dry Pineapple Powder                                                2 tbsp

Dry Coconut and Dry Pineapple very small pieces for garnishing.

 

Method:

Take Refined White Wheat Flour and Semolina in a bowl. Add Sugar Powder and Ghee. Mix well. No water at all, please.

 

Leave it to rest for 8 to 9 hours.

 

Add Dry Coconut Powder and Dry Pineapple Powder and mix very well.

 

Depending on the size and shape of Cookies you want, take 2 to 4 tbsp of mixture and give shape of your choice. Push 2 pieces each of Dry Coconut and Dry Pineapple to garnish.

 

Bake all Cookies for 20 minutes at 180°F.

 

Serve to your Child and its visiting friends to enjoy while playing games at home.
