Refined White Wheat Flour 3 cups
Vegetable Ghee 1 ¼ cup
Sesame Seeds 1 ts
Baking Powder ½ ts
Sugar 1 cup
Cardamom Powder ½ ts
Vegetable Ghee to deep fry
Cardamom Powder 1 tbsp
Saffron threads 8-10
Almond chips 1 tbsp
Rose Petals 8-10
In a thick and deep cooking pot (kadai), take 1 cup of Vegetable Ghee and heat it. Add 1 cup of Refined White Wheat Flour and roast it to light brownish on low flame. Add 1 cup of Water. Stir it slowly taking care that it doesn’t get burnt and stick at the bottom of the cooking pot. Cook it on low flame until it becomes soft lump. Remove from the flame and leave it for a while to cool down.
In a bowl, take 2 cups of Refined White Wheat Flour, Sesame Seeds, Baking Powder, Cardamom Powder and 1 ts of Vegetable Ghee. Mix well. Add prepared soft lump. Mix and knead semi stiff dough. Add little water if needed.
Take approx 2 tbps of dough on a rolling board. Pet the dough on rolling board to shape like thick round puri (flat bread). Prick it 5-7 times. Repeat to make number of pieces from dough.
Heat Vegetable Ghee in a deep fry pan. Deep fry all prepared round thick puri to light or dark brownish as your choice but not to blackish. Khajli is ready.
In a pan, take 1 cup of Sugar. Add little water. Put it on low-medium flame to melt Sugar and prepare Sugar syrup of 2 string.
Dip all deep fried Khajli in Sugar syrup one by one and put in a open flat plat. Put each one separate to avoid sticking with each other. Khajli is sweet now.
Garnish each Sweet Khajli with little sprinkle of Cardamom Powder, 2-3 chips of Almond, 1-2 Rose Petals and 1 thread of Saffron.
Leave it for 8-10 minutes to let Sugar syrup settle very well and cool down.
