Dabeli Dosa

Prep.30 min., Cooking time 15 min., Yield 5 Dosa

Ingredients:

Batter for Dosa                                    1 cup

Butter                                                  1 ts

Potatoes boiled and crushed              2

Oil                                                        1 ts

Garlic Chutney                                    1 ts

Dabeli Masala                                     1 tbsp

Turmeric Powder                                 Pinch

Red Chilli Powder                               Pinch

Garam Masala                        1 ts

Tamarind Chutney                              2 tbsp

Salt to taste

Fresh Coriander Leaves                     1 tbsp

Dry Coconut grated or powder            2 tbsp

Pomegranate Granules                       2 tbsp

Onion very small chopped                  1

Spiced Peanuts                                   2 tbsp

Oil to panfry Dosa

Method:

Heat oil in a pan. Keep low flame. Add Garlic Chutney, Dabeli Masala, Turmeric Powder, Red Chilli Powder, Garam Masala, Tamarind Chutney, Salt and mix well for 1-2 minutes. Add boiled and crushed Potatoes and mix well for another 1-2 minutes. Remove the Dabeli mixture in a bowl.

 

Add Fresh Coriander Leaves, Coconut, Pomegranate Granules, Onion and Spiced Peanuts and mix well.

 

Now, heat flat not-stick pan. Keep low medium flame. Pour approx 2 tbsp oil on heated pan. Pour Batter for Dosa, 1 or 2 serving spoon depends on size of pan and your skill to manage to turn over Dosa. Spread poured Batter immediately using flat cooking spoon. Pour 1-2 tbsp oil around the border of spread of Batter on the pan and apply little oil on top of the spread. When underneath side is partially cooked, slowly penetrate flat edged cooking spoon down the spread to turn over. After turning over, pour little oil around the border of the spread to avoid sticking on the pan and make it easier to take it out of the pan. When underneath side is partially cooked, penetrating flat edged cooking spoon, turn it over. Depending the size of Dosa, put ½ to 1 serving spoon of Dabeli mixture in the middle of Dosa. Using flat edged cooking spoon, fold the border of Dosa from two opposite sides to wrap the mixture. Cook the outer side to light brownish if you like soft Dosa and little dark brownish if you like crunchy Dosa.

Serve Hot and Fresh direct from the pan. Escort with any home made semi liquified chutney or ketchup. Better with sour sauce like Tamarind Sauce or Tamarind Chutney.
