Zanzibar Mix

Ingredients:

For Black Eyed Beans Fry:

Black Eyed Beans split (soaked)                                1 cup

Chilli Paste                                                                  1 ts

Salt to taste

Oil to deep fry

For Potato Balls:

Potato boiled                                                               2

Garlic Chutney                                                            1 ts

Lemon Juice                                                                ½ ts

Gram Flour                                                                  ½ cup

Refined White Wheat Flour (Maida)                            ½ cup

Green Chilli chopped very small                                 ½ ts

Soda-bi-Carb                                                               Pinch

Salt to taste

Oil to deep fry

For Sauce:

Potato peeled and chopped in small pieces               1

Green Chilli chopped very small                                 2

Refined White Wheat Flour (Maida)                            1 ts

Salt to taste

For Coconut Chutney:

Fresh Coconut grated                                                 1 cup

Green Chilli chopped very small                                 3

Lemon Juice                                                                ½ ts

Salt to taste

For Serving and Garnishing:

Piri Piri Sauce                                                             1 tbsp

Green Mango paste                                                    1 tbsp

Casava chips                                                              ¼ cup

Peanuts fried                                                               1 tbsp

Method:

For Black Eyed Beans Fry:

Strain soaked split Black Eyed Beans. Add Chilli Paste and Salt. Mix well to make semi stiff mixture.

 

Heat Oil in deep fry pan. Put number of small lumps of prepared mixture in heated oil. Deep fry on medium flame until lumps becomes brownish. Remove from the oil and put them on kitchen tissues to get extra oil absorbed.

 

For Potato Balls:

Take boiled Potatoes in a bowl. Add Garlic Chutney, Lemon Juice, small chopped Green Chilli and Salt. Mix well crushing boiled potatoes.  Yes, crushing, not mashing boiled Potatoes.

 

In another bowl, take Gram Flour and Refined White Wheat Flour. Add Salt and Soda-bi-Carb. Add little water and mix well to make it like thick slurry.

 

Make number of balls of prepared Potato mixture.

 

Heat Oil in deep fry pan. One by one, deep Potato Balls in Gram Flour slurry and put slowly in heated oil to deep fry. Turn Potato balls in oil to make sure to get fried all around. When fried, remove from oil and put them on kitchen tissues to get extra oil absorbed.

 

For Sauce:

In a small bowl, take Refined White Wheat Flour. Add little water to prepare slurry.

 

Heat 2 glasses of water in a pan. Add chopped Potato and boil. When Potato pieces are boiled well, add Salt, Chopped Chilli and slurry of Refined White Wheat Flour. Continue boiling on medium flame for 3-4 minutes. Remove the pan from the flame and keep a side.

 

For Coconut Chutney:

In a small bowl, take grated Fresh Coconut. Add Lemon Juice, chopped Green Chill and Salt. Take these mixture in a wet grinding jar of your mixer. Add little water. Grind it for 20-30 seconds. Coconut Chutney is ready. Remove it in a small bowl.

 

For Serving and Garnishing:

In a big size serving bowl, take Black Eyed Beans Fry and Potato Balls. Pour prepared Sauce on these. On top of that, garnish with Coconut Chutney, Piri Piri  Sauce, Green Mango Paste. Arrange fried Peanuts and Casava Chips to make it looking mouth watering.

 

Serve fresh.
