Puran Podi with Coconut Cream – Holige with Coconut Cream

Prep.10 min., Cooking time 30 min., Yield 6 pcs.

Ingredients:

For Dough:

Wheat Flour                                        1 cup

Oil                                                        2 tbsp

For Filling (Puran):

Split Pigeon Peas boiled                     1 cup

Ghee                                                   2 tbsp

Sugar                                                  ½ cup

Cardamom Powder                             Pinch

Ghee for Frying

For Coconut Cream:

Cream                                                 ¼ cup

Condensed Milk                                  ¼ cup

Milk                                                      ¼ cup

Coconut Milk Powder                          3 tbsp

For Garnishing:

Dry Fruits

Silver Foil

Method:

For Coconut Cream:

In a bowl, mix Milk and Coconut Milk Powder. Add Cream, Condensed Milk and Dry Fruits. Boil it low-medium flame for some time until it becomes thick. Stir occasionally while boiling. Leave it to cool down.

 

For Filling (Puran):

In a bowl, take boiled Split Pigeon Peas. Add Ghee, Sugar and Cardamom Powder and mix well. Heat Ghee in a pan. Add Split Pigeon Peas mixture and fry for 2-3 minutes on low flame. Mix well while frying.

 

For Puran Podi:

In a kneading bowl, take Wheat Flour. Add Oil. Add water slowly as needed. Knead semi soft dough.

 

Make number of medium size balls from dough. Roll small thick chapatti from a dough ball. Put 1 or 2 tbsp of prepared Filling in the middle of the chapatti. Fold border of the chapatti to wrap the Filling. Roll filled chapatti again. Don’t use much pressure. Take care of filling not coming out of chapatti. Apply Wheat Flour on surfaces of Chapatti while rolling for easy rolling and also avoiding chapatti sticking on rolling board. Roll such stuffed chapatti from all dough balls.

 

Shallow Fry all rolled chapatti one by one in Ghee. Puran Podi are ready.

 

Take Coconut Cream in a serving bowl. Put Puran Podi on it. Garnish with Dry Fruits and Silver Foil.

 

Serve Hot.
