Green Bhaji Pav

For 2 persons



Oil 2 tbsp

Ginger-Garlic-Chilli Paste 1 tbsp

Spring Onion chopped 1 cup

Spring Garlic chopped ¼ cup

Tomato chopped 2

Capsicum chopped 1

Mix Vegetables chopped 2 cup

(Egg Plants, Potato, Bottle Gourd, Cabbage, Cauliflower)

Spinach Puree ½ cup

Green Peas 2 tbsp

Pavbhaji Masala 1 ts

Garam Masala 1 ts

Salt to taste

Spring Garlic chopped for tempering             2 tbsp

Onion Rings for garnishing

Buns for serving


Heat Oil in a pan. Add Ginger-Garlic-Chilli Paste, Spring Onion, Spring Garlic, Tomato, Capsicum and Mix Vegetables. Partially cook on low-medium flame for a while. Add Pavbhaji Masala, Garam Masala and Salt. Mix well. Add Spinach Puree and Green Peas. Continue cooking for a while.


In another pan, heat Oil. Temper Spring Garlic in heated oil.


Pour tempered Spring Garlic on cooked vegetable.


Garnish with Onion Rings.


Serve with Buns.

Modak Payasam

Preparation time 20 minutes

Cooking time 15 minutes

For 4 Persons


Milk 3 cup

Sugar 4 tbsp

Fresh Coconut shredded ½ cup

Jaggery 2 tbsp

Cardamom Powder ¼ ts

Rice Flour ½ cup

Ghee 1 tbsp


Mixed Nuts for garnishing



Take Milk in a clay pot. Add Sugar and pinch of Cardamom Powder. Put the pot on high flame to boil Milk. Keep it a side to use later.


Take shredded Fresh Coconut, Jaggery and pinch of Cardamom Powder in a non-stick pan and sauté it on low flame. When sautéed, leave it to cool down.


Then, prepare number of balls of prepared Coconut mixture.


Take ½ cup of water in a pan and put it on medium flame. Add Ghee in it. When Ghee is melted and water is hot, remove the pan from flame.


Take Rice Flour in a bowl. Add prepared hot water with Ghee gradually as needed to knead semi stiff dough. Knead it very well.


Set prepared Rice Flour dough in small modak moulds. Stuff them with prepared Fresh Coconut balls. Prepare all small modak.


Put the pot of Milk again on medium flame. When Milk starts to boil, add all prepared Modak in boiling Milk. Boil it until Modak are cooked well. Stir occasionally to prevent Milk boiling over.


Leave it to cool down to normal temperature.


Add Mixed Nuts.

Baked Wada Pav

Preparation time: 30 minutes

Cooking time: 40 minutes

Servings: 6


For Stuffing:

Oil 1 ts

Mustard Seeds ½ ts

Cumin Seeds ½ ts

Skinned and Split Black Gram 1 tbsp

Ginger-Garlic-Green Chilli 1 tbsp


Curry Leaves 4-5

Turmeric Powder ½ ts

Potato boiled and chopped 2

Fresh Coriander Leaves 1 tbsp

Dry Garlic Chutney 1 tbsp

For Pav (Buns):

Milk 150 ml

Sugar 2 ts

Dry Yeast 1 ts

Refined White Wheat Flour 200 gm


Milk Powder 2 tbsp

Salt to taste

Butter 3 tbsp


Oil for greasing


Milk and Butter for polishing


Green Chutney for serving



For Stuffing:

Heat Oil in a pan. Add Mustard Seeds, Cumin Seeds, Skinned and Split Black Gram, chopped Ginger-Garlic-Green Chilli and Curry Leaves. When sautéed, add Turmeric Powder, boiled Potato, Fresh Coriander Leaves. Mash boiled Potato while mixing well on low flame. Cook for 2-3 minutes. Remove the pan from flame.


Prepare number of small balls of prepared stuffing.


Coat prepared balls with Dry Garlic Chutney. Keep a side.

For Pav (Buns):

Lukewarm Milk. Add Sugar and Dry Yeast. Mix well. Cover the pan with a lid. Leave it for approx 5 minutes.

Take Refined White Wheat Flour in a bowl. Add Milk Powder and Salt. Mix well. Knead soft dough adding Milk and Yeast mixture. Add Butter and mix well. Rub the dough repeatedly for 5-7 minutes. Leave it to rest for 90 to 120 minutes.


Then, take the dough on a rolling board or any hard surface. Punch it for 3-4 minutes.


Make number of medium size lumps of dough. One by one, take lump, squeeze and press lightly and tap with a palm to shape it thick round. Put 1 ball of stuffing in the middle of it and wrap it shaping it a ball.


Repeat to make number of balls.


Grease baking dish with Oil. Put all prepared stuffed balls on a greased baking dish. Leave it for approx 30 minutes. (out of oven).


Then, brush Milk on all balls in a baking dish.


Pre-heat oven. Bake for 20 minutes at 200°.


Brush Butter on all balls after baking.


Arrange bakes balls on a serving plate.


Serve hot with Green Chutney.
