Mix Vegetable Samosa Pinwheels

Servings 15 Samosa



For Dough:

Refined White Wheat Flour (Maida) 1 cup

Oil 3 tbsp

Carom Seeds ¼ ts

Salt to taste

For Stuffing:

Potato boiled and mashed 2

Green Peas boiled ¼ cup

Mix Vegetables finely chopped 1 cup

(preferably Coli Flower, Carrot, Capsicum)

Oil 1 tbsp

Mustard Seeds ½ ts

Cumin Seeds ½ ts

Asafoetida Powder Pinch

Garlic Paste 1 ts

Ginger Paste 1 ts

Green Chilli chopped 1 ts

Fresh Mint Leaves 2 tbsp

Fresh Coriander Leaves 2 tbsp

Salt to taste

Turmeric Powder ½ ts

Red Chilli Powder ½ ts

Black Salt Powder ¼ ts

Mango Powder ¼ ts

Garam Masala ½ ts


Corn Flour for coating ½ cup

Oil for deep frying

Home made Green and Red Chutney for serving



For Dough:

Take Refined White Wheat Flour in a bowl. Add Carom Seeds and Salt. Mix well. Add Oil and mix well. Knead semi stiff dough adding water gradually as needed.


For Stuffing:

Heat Oil in a pan. Add Mustard Seeds, Cumin Seeds, Asafoetida Powder and Fresh Mint Leaves. When crackled, Add finely chopped Mix Vegetables and Salt. Mix well and cook for 7-8 minutes on medium flame while flipping occasionally. When Vegetables are cooked, add chopped Green Chilli, Garlic Paste, Ginger Paste and mix well. Add Turmeric Powder, Red Chilli Powder, Black Salt Powder, Mango Powder and Garam Masala and mix well. Add boiled and mashed Potato, boiled Green Peas and Fresh Coriander Leaves. Mix well. Remove the pan from the flame. Stuffing is ready.


Take a big lump of prepared Dough and roll big round and thin chapatti of it. Spread 2-3 tbsp of prepared Stuffing on it. Roll chapatti to wrap stuffing on it. Cut this stuffed roll in small pieces which will look like wheels.


Repeat to finish prepared Dough and Stuffing.


Heat Oil for deep frying.


One by one, coat all wheel shaped pieces with Corn Flour and deep fry. Turn over occasionally and slowly to deep fry all sides very well. Deep fry to light or dark brownish to your taste.


Serve Hot with Home made Green and Red Chutney.

Mooli ke Parathe / Daikon Paratha

Preparation time 15 minutes

Cooking time 10 minutes

Servings 4 Paratha



Whole Wheat Flour 1 cup

Oil 2 tbsp

Carom Seeds 1 ts

Salt to taste

Daikon (Mooli) grated ¼ cup

Green Chilli chopped 1-2

Ginger Paste ½ ts

Fresh Coriander Leaves 2 tbsp

Dry Whole Wheat Flour for rolling Paratha

Oil for roasting

Curd for serving



Take Whole Wheat Flour in a bowl. Add Oil, Carom Seeds and little Salt. Mix well. Knead soft dough adding water as needed.


Take grated Daikon in a bowl. Add little Salt and leave it to approx 8-10 minutes. Then squeeze to remove the water. Add chopped Green Chilli, Ginger Paste and Fresh Coriander Leaves. Mix well.


Take medium size lump of dough and make a ball of it. Roll it to thick round shape. Put 2-3 tbsp of prepared Daikon stuffing in the middle of rolled Paratha. Fold Paratha to wrap stuffing. Press it lightly on rolling board and roll again taking care of stuffing not coming out. When needed, coat with Dry Whole Wheat Flour while rolling to make rolling easier and to avoid sticking Paratha on rolling board and rolling stick.


Repeat to roll number of Paratha.


Pre-heat a non-stick roasting flat pan on low-medium heat. Put one rolled Paratha on pre-heated pan. When base side is partially roasted, turn it over. Apply little Oil on the upper side of Paratha. Turn it over. Apply little Oil on upper side. Turn it over. Make sure both sides are roasted well to ligh pink. Remove it from the pan and put it on a serving plate.


Repeat to roast all rolled Paratha, one by one.


Serve hot with Curd in a small bowl a side.

Oil 1 tbsp

Cumin Seeds 1 ts

Mustard Seeds ½ ts

Ginger-Garlic-Chilli Paste ½ ts

Onion chopped 1

Tomato chopped 1

Potato peeled and chopped 1

Daikon (Mooli) chopped 1

Black Eyed Beans soaked 1 cup

Salt to taste

Red Chilli Powder 1 ts

Turmeric Powder ½ ts

Corinader-Cumin Powder 1 ts

Garam Masala 1 ts

Fresh Coriander Leaves 1 tbsp

Steamed or Boiled Rice for serving



Take chopped Potato and Daikon in a beating bowl and beat well. Keep a side.


Heat Oil in a pressure cooker on high flame. Add Cumin Seeds and Mustard Seeds. When spluttered, add Ginger-Garlic-Chilli Paste and chopped Onion. When sautéed, add chopped Tomato. When sautéed, add beaten Potato and Daikon. Milx well. Add soaked Black Eyed Beans. Mix well.


Add Salt, Red Chilli Powder, Turmeric Powder, Coriander-Cumin Powder and Garam Masala. Mix well.


Cover the lid of pressure cooker. Pressure cool to 2 whistle.


Leave pressure cooker to cool down.


Open pressure cooker, Mix well slowly taking care of not mashing the stuff. Remove from pressure cooker in a serving bowl.


Sprinkle Fresh Coriander Leaves.


Serve with Steamed or Boiled Rice.

Aalu ki Fulori

Preparation time 10 minutes

Cooking time 20 minutes

For 2 Persons


For Tomato Chutney:

Tomato whole 1

Garlic buds 5-6

Green Chilli chopped 2-3

Fresh Coriander Leaves 2 tbsp

Cumin Powder 1 ts

Jaggery 1 ts

Salt to taste

Mustard Oil 1 ts

Panch Phoran 1 ts

(Fenugreek Seeds, Fennel Seeds, Black Mustard Seeds, Cumin Seeds and Nigella Seeds)


For Alu ki Fulori:

Potato boiled and peeled 2

Green Chilli finely chopped 1

Onion finely chopped 1

Fresh Coriander Leaves 1 tbsp

Gram Flour ½ cup

Red Chilli Powder 1 ts

Mango Powder ½ ts

Cumin Powder ½ ts

Chat Masala ½ ts

Salt to taste

Oil to deep fry



For Tomato Chutney:

Roast or Grill a whole Tomato on low flame. Rotate while roasting or grilling to get it roasted or grilled all sides. When Tomato skin becomes blackish, leave it to cool down. Then, remove the skin of Tomato.


Take skinned Tomato in a beating bowl.  Add Garlic buds, chopped Green Chilli, Fresh Coriander Leaves, Cumin Powder, Jaggery and Salt. Beat this very well coarse paste. Take it in a bowl.


Heat Mustard Oil in a pan. Add Panch Phoran. When crackled, add this in beaten Tomato mixture and mix very well.


Keep it a side to serve later with Fulori.


For Alu ki Fulori:

Crush boiled and peeled Potato. Please don’t mash, just crush.


In crushed Potato, add finely chopped Green Chilli, finely chopped Onion, Fresh Coriander Leaves, Gram Flour, Red Chilli Powder, Mango Powder, Cumin Powder, Chat Masala and Salt. Mix very well. It will become like a loaf.


Heat Oil to deep fry on medium flame.


Put number of small sized lumps in heated Oil and deep fry to little dark brownish. Flip occasionally to fry all sides well.


Serve Fresh and Hot with prepared Tomato Chutney.

Aalu Poha Chana Chevdo – Nagpuri Tarri

Preparation time 10 minutes

Cooking time 30 minutes

For 2 Persons


Oil 2 tbsp

Cinnamon Leaves 1

Dry Red Chilli 2

Carom Seeds ½ ts

Mustard Seeds ½ ts

Asafoetida Powder Pinch

Brown Chickpeas boiled 1 cup

Salt to taste

Red Chilli Powder 1 ts

Turmeric Powder ½ ts

Coriander-Cumin Powder 1 ts

Tamarind Water 1 tbsp

Fresh Coriander Leaves 1 tbsp


Alu-Poha (Potato-Flattened Rice) for serving

Poha Chevdo for serving


Varhadi Masala 1 ts


(Varhadi Masala : Star Anise 10 gm, Dry Red Chilli 125 gm, Dry Coriander Granules 250 gm, Cinnamon Leaves 125 gm, Black Pepper Granules 50 gm, Cumin Seeds 50 gm, Caraway Seeds 10 gm, Clove Buds 10 gm, Cinnamon 10 gm, Black Stone Flowers (Dagad Phool / Kalpasi / Chabila) 50 gm, Fenugreek 25 gm, Poppy Seeds 25 gm, Large Cardamom 50 gm, Mace Blades 10 gm. Dried and ground powder of all these listed spices)



Heat Oil in a pan. Add Cinnamon Leaves, Dry Red Chilli, Carom Seeds, Mustard Seeds and Asafoetida Powder. When spluttered, add boiled Brown Chickpeas and mix well. Add Salt, Red Chilli Powder, Turmeric Powder and Coriander-Cumin Powder and Varhadi Masala. Mix well. Add Tamarind Water and mix well. Continue cooking on medium flame for 5-7 minutes. Stir occasionally. Add Fresh Coriander Leaves and mix well. Remove the pan from the flame.


Take Alu-Poha on a serving plate. Spread prepared Chickpeas mixture. Sprinkle Poha Chevdo.


Serve immediately for fresh taste.

Snacking with Nagpuri Tarri Poha…

Baigan – Eggplants Fritters

Prep.20 min., Cooking time 20 min., for 4 Persons


For Fritters:

            Eggplant round slices                          of 1 eggplant

            Gram Flour                                         1 cup

            Semolina                                             2 tbsp

            Turmeric Powder                                ½ ts

            Red Chilli Powder                               ½ ts

            Soda-bi-Carb                                      ½ ts

            Salt to taste

            Oil to deep fry

For Serving:

            Tamarind water                                   1 cup

            Date-Tamarind Chutney                     1 cup

            Green Chutney                                   ½ cup

            Garlic Chutney                                    ¼ cup

For Garnishing:

            Spiced Peanuts                                   2 tbsp

            Thin Yellow Vermicelli            (sev)               ¼ cup


Take Gram Flour and Semolina in a bowl. Add Turmeric Powder, Red Chilli Powder, Soda-bi-Carb and Salt. Mix well. Add water as needed  and whisk well to prepare thick batter.

Heat Oil to deep fry. One by one, dip each slice of Eggplant in prepared batter and put in heated Oil to deep fry on low-medium flame. Turn over when needed to fry both the sides. Fry to light dark brownish.

Dip each fritter in Tamarind water and keep in a plate. Take care of keeping each fritter separate on  plate. Leave for approx 5 minutes.

Squeeze each fritter slowly between two palms to remove excess water and arrange on a serving plate.

Spread Date-Tamarind Chutney, Green Chutney and Garlic Chutney on all fritters on a serving plate.

Garnish with Spiced Peanuts and Vermicelli.

Serve Fresh and Hot.
