Take in a jar of mixer, Fresh Mint Leaves, Fresh Coriander Leaves, Green Chilli, Lemon Juice and Black Salt. Crush very well and then add in Curd and mix well.
Green Colour Curd is ready. Keep it a side.
For Assembling:
Take boiled Chickpeas, boiled Potato in a bowl.
Add Black Salt, ½ ts of Cumin Powder and 1 ts of Red Chilli Powder.
Crush boiled Chickpeas and boiled Potato and mix very well. Stuffing is ready.
One by one, take Puri and poke a hole on each Puri.
Fill Puri through hole with prepared stuffing.
Arrange stuffed Puri on a serving plate.
Pour on each Puri little of Green Chutney, Garlic Chutney and Sweet Chutney (Dates Chutney).
Heat Oil in a pan on low flame. Add chopped Onion. When Onion start to soften, add Green Chilli Paste, Ginger Paste, Garlic Paste, Tomato Puree and Salt. When sautéed well, add Turmeric Powder, Red Chilli Powder, Garam Masala and Tomato Ketchup. Mix well. Add 1 glass of water and cook on low medium flame for 3-4 minutes. Add pieces of Buns and push them in, to deep in the (soup) spicy water in the pan.
Remove the pan from the flame and take prepared spiced Buns on a serving plate.
For Masala Buns Chat:
Garnish Spiced Buns on a serving plate with sprinkle of Fresh Coriander Leaves, Sev, finely chopped Onion, Spiced Peanuts and Pomegranate granules.
For Cheese Masala Buns Chat:
Garnish spiced Buns on a serving plate with grated Cheese and arrange Jalapeno Rings and Olives Rings.
Serve immediately to enjoy the freshness of cooked spices.
